Fresh and Zesty Arugula Lemon Orzo


Ingredients

- 1 package of orzo pasta

- 6 cups fresh arugula, roughly chopped

- About lemon and a half (zest and juice)

- 2 tbsp extra virgin olive oil

- Salt and pepper to taste


Instructions

1. Cook the Orzo:

- Bring a pot of salted water to a boil. Add the orzo and cook according to the package instructions until al dente. This usually takes about 8-10 minutes.

- Drain the orzo. Put In large bowl.


2. Combine Ingredients:

- With orzo, add arugula, lemon zest, lemon juice, and olive oil. Season with salt and pepper to taste. Toss well to coat the pasta evenly.


3. Add Any Desired Additional Toppings:

- Grated Parmesan cheese, chopped tomatoes, or chicken or sausage are great additional toppings.


4. Serve:

- This dish can be enjoyed warm, at room temperature, or chilled.

- Garnish with additional lemon zest or a sprinkle of Parmesan cheese, if desired.
