As the cooler weather settles in, there’s nothing better than a hearty, comforting meal to warm you up. At Arrows Farm, we’re all about bringing the best of the season’s harvest to your table, and this Chicken & Wild Rice Soup with Collards is the perfect way to enjoy our fresh, seasonal veggies!

Collard greens are one of our fall favorites, packed with nutrients and perfect for soups, sautés, and more. This recipe swaps traditional spinach for collards, adding an earthy, nutritious twist to a classic dish.


Collards are one of the easiest leafy greens to grow, making them perfect for beginners and seasoned gardeners alike. Start by planting seeds or transplants in well-drained soil with plenty of organic matter. They thrive in cooler temperatures, so planting in early spring or fall ensures the best results. Space the plants about 18 to 24 inches apart to allow for their large, leafy growth. Collards are hardy and can withstand frost, which actually improves their flavor! Be sure to water regularly, keeping the soil moist but not waterlogged, and feed with a nitrogen-rich fertilizer to encourage healthy, leafy greens. Before you know it, you'll have an abundant harvest of fresh collards ready for your favorite recipes.


Chicken & Wild Rice Soup with Collards Recipe

This easy and delicious soup uses tender chicken, wild rice, and our farm-fresh collards, bringing cozy flavors to your table. Here’s how to make it!

Ingredients:

  • 1 lb boneless, skinless chicken breasts

  • 1 cup wild rice

  • 1 bunch of fresh collard greens from Arrows Farm, chopped

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, diced

  • 8 cups chicken broth

  • 1 tsp thyme

  • 1 tsp rosemary

  • 1 bay leaf

  • Salt and pepper to taste

  • Olive oil

Instructions:

  1. Sear the chicken and set aside.

  2. Sauté your onions, carrots, celery, and garlic.

  3. Add chicken broth, rice, and seasonings.

  4. Shred the chicken and add it to the soup along with the fresh collards.

  5. Simmer until the rice is tender and the collards are perfectly wilted.

This soup is perfect for a chilly evening or to enjoy around the family table after a busy fall day.
